Summer cocktails

Summer has finally arrived! With the days getting longer, the nights getting lighter and the temperature getting warmer its time to get out the garden furniture and relax. As the temperature rises a cool summer cocktail is the ideal solution to combat the heat. Whilst we can’t guarantee the summer will be a scorcher these cocktails will give you a taste of a more tropical climate….

Tropical Smash

½ peach

½ apricot

1 orange

4 sprigs fresh mint

35ml Cognac

1 tbsp peach schnapps

1 tsp sugar syrup

ice cubes and crushed ice,

Cut the peach, apricot and orange into wedges and place into a cocktail shaker along with 3 sprigs of mint and crush well. Add the Cognac, peach schnapps and the sugar syrup. Add some ice and shake hard, then strain into a tumbler filled with crushed ice. To serve, garnish with a sprig of mint.

Strawberry Bellini’s

50ml strawberry puree

150ml champagne or cava

Strawberries and mint to garnish,

Make the strawberry puree by blitzing fresh strawberries in a blender. Place the strawberry puree in a chilled champagne flute and top up with the sparkling wine. Stir gently and garnish with a sliced strawberry and sprig of mint.

Pineapple and Raspberry Woo Woo

20 raspberries

Lime wedge

25ml vodka

25ml raspberry liqueur

Pineapple juice

Crushed ice

Put all but three raspberries into a cocktail shaker with the lime and crush. Add the vodka, raspberry liqueur, and some crushed ice and shake well, then strain into a tall glass. Top up with the pineapple juice and garnish with the remaining raspberries.

Drivers Ginger Juice

100ml apple juice

50ml pear juice

20ml lemon juice

1tsp grated root ginger

Non-alcoholic ginger beer

Slice of apple or mint to garnish

Crushed ice

Half fill a cocktail shaker with crushed ice, then add the fruit juice and grated root ginger. Shake well then strain into an ice filled highball glass. Top up with the ginger beer then garnish with a slice of apple or sprig of mint.
